Friday’s Feast #18
Porridge with banana, peanut butter and chocolate
If there is one thing that the Portuguese always have for breakfast is bread and butter. It tastes good but it’s not the ideal meal to start your day day. At O Apartamento we always try to diversify and these porridges are one of the fastest and quickest options for breakfast. It will only take you 5 minutes to prepare a simple, tasty and nutritious breakfast.

Ingredients
4 cs Whole oats (gluten free or not)
1 tbsp Ground golden flaxseed
1 tbsp Peanut butter
1 cup Milk
1 cup Water
½ Banana
1 cc Honey (or other sweetener like stevia)
Chocolate to grate (minimum 70% cocoa)

Method
In a frying pan pour the water, the milk (or almond or coconut ‘milk’), the oats, the flaxseed and part of the banana chopped into small pieces. Set aside the remaining banana. Cook on a medium heat, stirring repeatedly so that it doesn’t stick to the bottom.

Add the honey ( we used Samelas’)when it begins to thicken and stir. Because the banana will give some sweetness to the porridge, we suggest that you taste it before you add the honey (be careful not to burn your tongue!).

When it starts to get the consistency of a baby mash, turn off the heat, add the peanut butter and stir. Pour it into a bowl an set aside for 2 or 3 minutes. Aside, slice the remaining banana and place over the porridge. Grate chocolate to taste.

In one word: yummy!
