Red Wine Poached Pears

Ingredients

8 to 12 Small pears (or 6 large)
350g Brown Sugar
750ml Red Wine
250ml Water (just enough to cover the sugar)
1 Shot Port(o) Wine
1 Lemon
1 Cinnamon Stick
1 or 2 Star Anise

Method

Combine the sugar, water and the wine and bring to a boil. Once the wine mixture is boiling, turn heat down to a simmer for about 20 minutes until pears are tender. Remove pears. If the wine mixture is too liquidy, then let it boil until the liquid has been reduced. Pour sauce over pears and serve.

Meanwhile, peel the pears keeping the stem. Wrap in lemon juice (reserve a lemon peel before squeezing it, as you will need it for the next step) and set aside.

Once the wine mixture is boiling add the pears, cinnamon, star anise and the lemon peel. Turn the heat down to a simmer for about 45 minutes until pears are tender. Remove pears carefully and set aside.

Add the Port Wine and let it boil until the liquid has been reduced. Pour sauce over pears and serve or store it in a jar with the sauce.
